QSR Multi-Outlet F&B Manager -Marketplace, Grab & Go, Coffee Shops (65796)

Position Summary

The QSR Manager of Marketplace, Grab & Go & Coffee Shops provides unified leadership over all quick-service, retail, and coffee shop outlets at Catawba Two Kings Casino. This role encompasses the Marketplace Food Hall with five culinary concepts (Taco/Mexican, Grill, BBQ, Asian, and Chicken), the Sweet Shop and Coffee Shop located inside the Marketplace, and the Grab & Go hotel coffee shop which operates 24 hours a day, seven days a week.

Consolidating these outlets under one manager reflects their shared team profile, common product sourcing from the Production Kitchen, and the physical co-location of the Sweet Shop within the Marketplace. This leader will build a cross-trained retail and counter-service team capable of delivering consistent speed, quality, and hospitality across every daypart — including overnight at the Grab & Go.

Key Responsibilities & Duties

Multi-Outlet Operations

• Manage daily FOH operations across all five Marketplace food concepts (Taco/Mexican, Grill, BBQ, Asian, Chicken), the Sweet Shop / Coffee Shop, and the Grab & Go / Hotel Coffee Shop.
• Recruit, hire, train, schedule, coach, and develop QSR attendants, cashiers, baristas, and retail team members across all locations.
• Build a cross-trained team capable of covering both Marketplace and Grab & Go shifts including overnight coverage at the Grab & Go.
• Establish and maintain a consistent coffee and espresso beverage program across the Sweet Shop and Grab & Go coffee shop.
• Ensure speed-of-service standards are met at all Marketplace stations during peak casino traffic periods.
• Lead daily pre-shift meetings across all locations; communicate menu changes, product counts, daily specials, and operational priorities.

Retail, Kiosk & Production Coordination

• Coordinate daily with the Production Kitchen on fresh-baked goods inventory, packaged product rotation, and par-level expectations for Grab & Go retail.
• Manage self-serve kiosk operations at the Grab & Go including product availability, pricing accuracy, and guest usability.
• Coordinate with beverage leadership on the casino bar inside the Marketplace.

Food Safety & Compliance

• Monitor and enforce food safety, sanitation, and allergen awareness standards at all outlets.
• Coordinate with culinary leadership on recipe training, station readiness, product consistency, and waste management.
• Oversee Agilysys InfoGenesis POS transactions, cashier accuracy, and nightly close-out audits across all locations.

Financial & Administrative

• Manage labor scheduling across a 24/7 operating model; ensure strong overnight supervisor or keyholder coverage at the Grab & Go.
• Manage supply ordering, par levels, and inventory checks for FOH materials at all outlets.
• Handle guest feedback, service recovery, and escalated complaints across all locations.
• Submit daily and weekly labor, COGS, and operational recaps to the Director of F&B.
• Perform other duties as assigned.

Qualifications

Qualifications & Skills

• Minimum 3 years of management experience in a high-volume quick-service, food hall, coffee shop, or multi-concept retail food environment required.
• Barista or coffee shop management experience strongly preferred.
• Experience managing 24/7 operations or overnight retail staffing preferred.
• Experience managing multiple concurrent service locations or stations preferred.
• Must hold ServSafe Food Handler and ServSafe Alcohol Certification prior to starting the position.
• Must be able to obtain and maintain a valid Catawba Gaming License.
• Must adhere to all Catawba Gaming Commission regulations, company policies, and procedures.
• Must have the ability to work flexible schedules including nights, weekends, and holidays.
• Must be at least twenty-one (21) years of age.

Physical & Work Environment Requirements

• Ability to stand and walk for extended periods.
• Ability to lift up to 50 lbs.
• Work in a fast-paced food service and casino environment.
• May occasionally be exposed to secondhand cigarette smoke.
• Must meet all casino employment and background check requirements.
