Position Summary
The Pastry Commis III – Breakfast Buffet is responsible for the daily preparation, replenishment, and presentation of the breakfast pastry offerings, ensuring exceptional quality and consistency in line with Four Seasons standards. The role supports the pastry team in delivering an outstanding guest experience through fresh bakery products, viennoiseries, breakfast pastries, and buffet displays.
The Commis III demonstrates professionalism, attention to detail, and a passion for hospitality while maintaining the highest standards of hygiene, food safety, and product quality.
Key Responsibilities
Breakfast Buffet Preparation
- Prepare and bake daily breakfast items according to established recipes and standards.
- Assist in the production of:
- Croissants
- Pain au chocolat
- Danish pastries
- Muffins
- Breakfast cakes
- Brioche
- Doughnuts
- Mini pastries
- Sweet breakfast specialties
- Ensure all breakfast items are ready before buffet opening.
Buffet Presentation
- Assist in setting up breakfast buffet displays.
- Ensure products are attractively presented and fully replenished throughout service.
- Maintain cleanliness and organization of buffet presentation areas.
- Monitor product quality and replace items that do not meet standards.
Production & Mise en Place
- Complete assigned mise en place efficiently and on time.
- Prepare ingredients, fillings, toppings, batters, and doughs.
- Assist senior chefs with pastry and bakery production as required.
- Follow production schedules and daily checklists.
Quality Standards
- Follow standard recipes and specifications.
- Ensure consistency in appearance, taste, texture, and portion size.
- Inform supervisors immediately of any quality concerns.
- Maintain Four Seasons standards in every product served.
Hygiene & Food Safety
- Follow HACCP and food safety procedures at all times.
- Ensure correct storage, labeling, and stock rotation (FIFO).
- Maintain a clean and organized workstation.
- Participate in daily and weekly cleaning schedules.
- Adhere to company grooming and hygiene standards.
Stock Management
- Assist with receiving and storing goods.
- Report shortages and maintenance issues promptly.
- Minimize food waste through proper handling and storage.
- Support monthly inventory counts when required.
Teamwork & Communication
- Work effectively within the pastry and culinary teams.
- Follow instructions from supervisors and chefs.
- Maintain a positive and professional attitude.
- Assist colleagues during busy periods and special events.
Qualifications
Education
- Certificate in Pastry Arts, Bakery, Culinary Arts, or equivalent vocational training preferred.
Experience
- Minimum 6 months to 1 year experience in a pastry, bakery, hotel, or restaurant environment.
- Previous experience in luxury hospitality is an advantage.
- Basic understanding of pastry production and breakfast bakery operations.
Technical Skills
- Basic pastry and bakery techniques
