As the Maitre d'Hotel you will lead the front of house operations for Remy and Enchanté while providing an outstanding dining experience like no other. This French-inspired luxury restaurant serves gastronomic cuisine crafted by premier Michelin star chefs.
You will report to: Executive Chef - Remy/Enchanté

Responsibilities

How You Will Make a Difference

  • Monitor breakage, consumption, inventories and all replaceable items within budgetary targets
  • Handle the financial success of the restaurant by achieving budgeted revenue, controlling expenses and growing profitability
  • Assist in the development, training and implementation of new menus
  • Lead all aspects of the maintenance of furniture and equipment to ensure that all restaurant facilities are cleaned and stocked
  • Ensure all service related working procedures are in compliance with USPH standards and lead inspection team with leadership
  • Coordinate, develop, and train team to ensure a one-of-a-kind guest experience guest, including food quality, sanitation and accident prevention related training
  • Facilitate department meetings

Basic Qualifications

What You Will Bring to the Team

  • Minimum four years management experience in a fine dining “classic French style” restaurant.
  • Proficiency in table side service such as meat carving, filleting of fish, etc.
  • Knowledge of old world wines and proficiency in food and wine pairing
  • Excellent interpersonal skills and ability to serve Guests of all ages
  • Proficiency with POS systems (Micros preferred)

Preferred Qualifications

How You Will Stand Out

  • Sommelier certification
  • Formal Hospitality training or Hotel school
  • Prior ship experience

Additional Information

This is a SHIPBOARD role. 
You must: 

  • Be genuinely interested in a career at sea and willing to live and work onboard a Disney Cruise Line vessel 
  • Be willing to follow and perform safety role, emergency responsibilities, and associated responsibilities as specified in the ship Assembly Plan 
  • Be willing to uphold the general safety management responsibilities as specified in the Safety Management System in areas and operations under their control 
  • If applicable, be willing to share a confined cabin with other crew members and appreciative of working and living in a multicultural environment that has strict rules and regulations 
Your Responsibilities: 
  • Have a valid passport and C1/D Seaman's visa (DCL will provide you with documents to obtain this) 
  • Complete a pre-employment medical 
  • Obtain a criminal background check 
  • Bring approved work shoes
