savoir-faire spécifique (cuisine à la carte) :

• Maîtrise descuissons minute (viandes, poissons, fruits de mer) avec précision et constance
• Capacité à gérer descommandes variées et simultanées, typiques du service à la carte
• Excellente connaissance dudressage à l’assiette, avec sens esthétique et souci du détail
• Application rigoureuse desfiches techniques, tout en garantissant rapidité et qualité
• Adaptation aux demandes spécifiques des clients (allergies, cuissons, modifications)
• Coordination efficace avec les autres postes pour assurer un envoi fluide et synchronisé
• Gestion dutiming en service pour éviter les temps d’attente et assurer la satisfaction client
• Maîtrise des produits frais et capacité à valoriser les ingrédients de qualité
• Contribution à l’amélioration continue de la carte (suggestions, optimisation des préparations)
