We're looking for a talented and passionate Sushi Chef to join our culinary team in Istanbul, Türkiye. In this role, you'll be at the heart of our kitchen, crafting exceptional sushi dishes that delight our diverse and international clientele. As a detail-oriented culinary professional, you'll combine traditional Japanese techniques with innovative approaches to deliver outstanding dining experiences in a dynamic, fast-paced environment.
- Prepare and present high-quality sushi dishes with meticulous attention to detail, ensuring consistency and excellence in every plate
- Master the art of rice preparation, seasoning, and temperature control to achieve authentic sushi standards
- Assess and select premium-quality fish and ingredients, maintaining strict standards for freshness and sourcing
- Maintain rigorous food safety and hygiene protocols, particularly for raw fish handling and cross-contamination prevention
- Collaborate effectively with kitchen staff and front-of-house team to ensure seamless service delivery and guest satisfaction
- Customize sushi offerings based on guest preferences, dietary restrictions, and allergies while maintaining culinary integrity
- Manage inventory, portion control, and cost efficiency without compromising quality or presentation
- Stay current with Japanese culinary trends and techniques, bringing innovative ideas to menu development
- Train and mentor junior kitchen staff, fostering a supportive and inclusive team environment
- Perform efficiently during peak service periods while maintaining composure and quality standards
- Communicate proactively with management regarding ingredient needs, equipment maintenance, and operational improvements
- Proven expertise in sushi preparation techniques and authentic Japanese culinary traditions
- Strong knowledge of fish quality assessment, sourcing, and seasonal ingredient selection
- Proficiency with sushi-specific tools and equipment (knives, mats, rice cookers, and specialized utensils)
- Comprehensive understanding of Japanese ingredients, flavor profiles, and traditional preparation methods
- Solid culinary knowledge with demonstrated technical skills in food preparation and presentation
- Certification or formal training in Japanese cuisine (preferred)
- Experience working in a luxury hospitality or fine dining environment
- Excellent interpersonal and communication skills with a collaborative mindset
